When the webteam creates a folder for your site, we usually will put a "docs" and an "images" folder in side your main folder. This is only a convenience. You can change these names, add new folders (in fact we encourage you to) and even delete them (they have to be empty first though).
If you have only a few images and a few documents, these two folders may be sufficient for your use. However if you have a lot of documents for a number of divisions/sections etc and images for those divisions/sections, it would be a good idea ot organize these so you can easily find them.
