On June 1, Creighton University Provost Mardell Wilson, EdD, RDN, announced some exciting dining updates coming to Creighton's Omaha campus. Below is her message to Omaha campus faculty, staff and students.

I hope you are enjoying, and settling into, your summer schedules. There is plenty of progress to report on the Creighton campus, as we continue with a number of renovation and construction projects.

I am excited to announce that as part of renovating and upgrading the V.J. and Angela Skutt Student Center, we are investing in an expanded and engaging dining environment that will include national retail food outlets Qdoba and Firehouse Subs.

Dining is an important part of a vibrant and welcoming campus, and the current renovations not only address student feedback requesting new national food outlets but will include improved gathering and seating areas on the lower level of the Skutt Student Center.

This transformation includes adding Qdoba and Firehouse Subs; expanding the popular Mein Bowl and Jack & Ed’s convenience store; continuing to offer Godfather’s Pizza and Hissho Sushi; and adding space for more grab-and-go meal options. Important for many, Starbucks will remain in its current location in Skutt and will reopen for the fall term in August.

The dining renovations and additions are scheduled to be complete by January 2024, and we will continue to communicate updates throughout the coming months, including alternate food options during the construction period.

Best wishes for a happy and healthy summer. For those currently away from campus, we certainly look forward to welcoming you back in the fall.

Mardell Wilson, EdD, RDN
