Newly Renovated Brandeis Dining Hall Offers Variety of Options

After a summer of renovations, Brandeis Hall’s reconfigured space is a win/win for Creighton students, faculty and staff.

The lower level of Brandeis is now home to the Creighton Intercultural Center, the Lieben Center for Women, the VIP Center and Creighton Dining offices.

Work on the project began in August 2017, on the lower level. In March, Brandeis Dining Hall was closed while the project picked up, shifting operations to Becker Hall and Harper Dining Hall.

After reopening in August, the dining hall is serving up favorites as well as new options to satisfy a variety of tastes.

The “new” Brandeis Dining Hall features an in-house bakery that was relocated from Becker Hall. The bakery serves fresh crepes, pastries, desserts and waffles, and also prepares all baked goods for Creighton’s campus.

A coal-fired pizza oven, its exterior covered in gray and white tiles, is the central feature of the Italian Bistro station. The station also serves house-made pasta.

The new concept also has a focus on mindful eating, with a station that serves vegan meals, as well as whole fruit and vegetables.

Patrons with food allergies and sensitivities can comfortably choose options from the Simple Servings station. The meals offered at this station are free of milk, eggs, wheat, soy, shellfish, peanuts, tree nuts and gluten, and the dining staff follows procedures to prevent cross-contamination with these allergens.

The new space flows seamlessly from station to station, while offering expanded seating options for patrons and more windows, which provide more natural light. Traditional standbys such as a salad bar and grilled chicken breasts are served, as well as a hummus bar and Asian-fusion noodles.

The very popular “Simply to Go” station, located next to the dining hall, offers an expanded variety of “take and eat” entrees and sides, including salads, sandwiches, fresh fruit and vegetables, and cheese and crackers.

On a recent Tuesday, the dining hall was humming with activity over the lunch hour. Students gathered around tables and in booths, chatting with friends or quizzing each other on vocabulary terms for a test later that day. A Creighton Dining staff member helped reunite a student with a left-behind umbrella, and upbeat pop hits softly filtered through the speakers.
